Crock pot stews filled with vegetables, beans and dried herbs are bursting with flavor.

Creamy Pheasant Hotpot.

Posted by on Nov 5, 2013 in cooking | 0 comments

Pheasant can make a delicious, warming, winter meal. By far the most valuable part of the bird is the breast. Wings and legs can often be tough unless cooked slowly or well marinated. Here is a delicious autumnal recipe that makes the most of the whole pheasant. Its best to use at least one pheasant per person. The following recipe serves four.

  • Start by dicing the breast and remove any skin from the wings and legs.
  • Dust the meat with flour until it is evenly covered. Season with salt and pepper.
  • Flash fry the meat with one large sliced onion in a large, thick bottomed saucepan.
  • Deglaze the pan with a splash of white table wine. Mix the excess flour with the wine to form a creamy paste, almost like a roux
  • Add a couple of handfuls of halved white, seedless grapes.
  • Cover with white wine, put a lid on the pan and simmer on the hob at a low heat for about an hour. The longer it simmers, the more tender the meat will become. Add water as needed to stop the sauce from becoming too thick.
  • When the pheasant is tender and the sauce is the consistency of custard, remove from the heat. Add single cream to taste and mix well into the sauce. The amount of cream you add really is a matter of preference and depends on how rich you want it to be.
  • Finally, sprinkle toasted pine nuts and chopped parsley on top. This is not essential but parsley is always nice for adding a ‘dash of green’ and the pine nuts will give it a bit of crunch.

The perfect accompaniment to this hearty dish is creamy mashed potatoes and steamed purple sprouting, but broccoli or braised red cabbage would work just as well.

Classy Coffee

Posted by on Apr 25, 2013 in Appliances | 0 comments

You know what gourmet coffee tastes and smells like and you know it’s not something you usually get to enjoy every day. What you may not know is that with an on demand coffee maker like the Nespresso Citiz model it’s easy to savor great coffee any time you’d like for just pennies a cup. On demand brewing systems such as the Tazo and other K-Cup® compatible single serve coffee makers have transformed the gourmet coffee market and made it possible for almost everyone to enjoy barista-quality coffee at home or work.

Making coffee is both an art and a science and the modern on demand brewing systems have captured both – they take all the guesswork out of making coffee. Regardless of the manufacturer most on demand brewers operate along the same general lines – they require electricity and feature a reservoir which can usually hold anywhere from six to 12 cups of tap or bottled water. There is no thermal carafe or coffee pot and warming plate which means there is less to clean and the coffee simply can’t get scorched or bitter.

With an on demand brewing system you no longer need to scoop and measure coffee because they use coffee inserts which may be pods, capsules, discs, K-Cups® or some other format. The inserts are premeasured and sealed so there is no waste and the coffee is fresh since the pods are opened only at the point of brewing. To make coffee you place a cup under the brew port, insert a coffee pod and press a button – in one minute or less the machine brews a perfect cup of coffee and issues it directly into your cup.
